Sweet and Sour Red Cabbage

Ingredients

  • 1 head red cabbage cut in ¼" squares
  • 3 large apples cored, chopped in small pieces, skin on
  • 1 small onion chopped
  • 2 whole lemons juiced
  • cup brown sugar

Instructions

  • Combine ingredients in a pot.
    Bring to a boil.
  • Reduce heat to a simmer.
    Let simmer for 2 to 3 hours until desired degree of tenderness of the red cabbage.

Notes

Note: This is the traditional manner of preparing it, but I think you could probably cook this in as little time as under an hour and the texture would be better, and the color brighter.
