Sweet and Sour Red Cabbage

Ingredients
- 1 head red cabbage cut in ¼" squares
- 3 large apples cored, chopped in small pieces, skin on
- 1 small onion chopped
- 2 whole lemons juiced
- ⅔ cup brown sugar
Instructions
- Combine ingredients in a pot.Bring to a boil.
- Reduce heat to a simmer.Let simmer for 2 to 3 hours until desired degree of tenderness of the red cabbage.
Notes
Note: This is the traditional manner of preparing it, but I think you could probably cook this in as little time as under an hour and the texture would be better, and the color brighter.
